WUSF Public Media’s the Longest Table Café presents Sweet Cherry Pie Recipe
The Longest Table is WUSF Public Media’s signature event to support public broadcasting in our region. The epicurean evening takes place annually in April and showcases some of the finest restaurants in the Tampa Bay area with food, wine and cocktails served at fabulously set tables running down Bayshore Drive from the Museum of Fine Arts to the Renaissance Vinoy Hotel. We are now launching the Longest Table Cafe, an online community for foodies in the Tampa Bay region. We will feature updates about the Longest Table and participating restaurants throughout the year, news about food in our region and, of course, lots of recipes to try at home! These last days of summer are a perfect time to enjoy this recipe for Sweet Cherry Pie. This recipe comes from America’s Test Kitchen from Cook’s Illustrated, a national publication for food hobbyists.
Makes one 9-inch pie serving 8
Vodka is essential to the texture of the crust and imparts no flavor – do not substitute. This dough will be moister and more supple than most standard pie dough and will require more flour to roll out (up to 1/4 cup). The tapioca should be measured first, then ground in a coffee grinder or food processor for 30 seconds. If you’re using frozen fruit, measure it frozen, but let it thaw before making the filling; if you don’t, you run the risk of partially cooked fruit and undissolved tapioca.
